PEAR SALAD

Balsamic Vinaigrette Dressing Ingredients:

⅓ cup extra virgin olive oil
3 Tbsp balsamic vinegar
1 Tbsp Dijon mustard
1 garlic clove, grated or minced
1/4 tsp fine sea salt
⅛ tsp black pepper, freshly ground

Pear Salad Ingredients:

½ small red onion, thinly sliced
5 oz arugula
3 pears, any variety
4 to 5 oz goat cheese
1 cup dried cranberries
½ cup pecans, toasted and cooled

Instructions

(Optional) Soak the onions in a small bowl of ice water for 10 minutes to remove some of their harsh flavors. Drain well, and pat dry with a paper towel.

In a mason jar, combine all of the salad ingredients and shake until well combined.

In a large shallow salad serving bowl, add your arugula greens. Top with pears and onions.

Sprinkle on goat cheese,
cranberries, and nuts.

Shake your dressing again if it has separated and drizzle it over the salad just before serving. You can serve with or without tossing; it’s prettier if you don’t toss it, and don’t worry, the dress

NICOISE SALAD

INGREDIENTS

4 large eggs1/3 cup extra-virgin olive oil
1 clove garlic, grated or finely chopped
3 Tbsp. sherry vinegar
1 Tbsp. Dijon mustard
1 tsp. honey
16 oz. oil-packed tuna, plus 2 tbsp. tuna oil
Kosher salt
Freshly ground black pepper
1/2 lb. green beans, trimmed
1/2 lb. small potatoes (such as Yukon Gold or red potatoes)
3 Persian cucumbers, sliced into 1/2" rounds
1/2 cup black olives (such as Kalamata)
8 oil-packed anchovy fillets (optional)
2 Tbsp. capers, drained

Directions

Step 1

In a medium bowl, prepare an ice bath. Fill a medium pot with water and bring to a boil, then reduce heat to medium and bring to a low boil. Using a spoon, carefully lower eggs into water. Cook 8 minutes. Using slotted spoon, transfer eggs to ice bath to cool. Remove pot with water from heat; set aside.

Step 2

Meanwhile, in another medium
bowl, whisk olive oil, garlic,
vinegar, mustard, honey, and
2 tbsp. tuna oil; season with
salt and pepper.

Step 3

Discard used ice water and prepare a new ice bath. Return reserved pot of water to high heat, add a large pinch of salt, and bring to a boil. Add green beans and cook, stirring occasionally, until bright green and just tender, 3 to 5 minutes. Transfer to ice bath to cool, then transfer to a clean kitchen towel or paper towels. Pat green beans dry.

Step 4

Add potatoes to boiling water
and cook, stirring occasionally,
until tender, about 15 minutes.
Drain.

Step 5

Peel and halve eggs. Halve
potatoes. Drain remaining oil
from tuna (reserving oil for
another use, if desired)
and break tuna into large
flakes.

Step 6

Divide eggs, green beans, potatoes, tuna, cucumbers, and olives among plates. Lay an anchovy fillet (if using) on each egg half. Top with capers and drizzle with dressing; season with salt and pepper. Serve with remaining dressing alongside.

Crispy Smashed Potato Salad

Pickley salad, crispy potatoes, and creamy ranch – this
smashed potato salad is the perfect summer combo!

Crispy Smashed Potatoes

24 ounces baby yukon gold potatoes
* 1 tablespoon salt
* avocado oil spray
* 2 tablespoons McCormick Salad Supreme seasoning Salad
* 2 hearts of romaine, finely chopped
* 1 cup dill pickles, chopped
* a quarter of a red onion, thinly sliced (about 1/4 cup)Dressing
* 1/2 cup plain Greek yogurt
* 1/2 cup mayo
* 1 clove garlic, grated
* 1 tablespoon Dijon mustard
* 1 tablespoon pickle juice
* 1 tablespoon freeze-dried dill (or 1/4 cup fresh, chopped)
* 1 teaspoon McCormick Salad Supreme seasoning
* 1/4 teaspoon kosher salt

Instructions

Potatoes: Bring a pot of water to boil. Add salt and potatoes; cook
until the potatoes are fork-tender (15-25 minutes, depending on size).

Veggies: While potatoes are cooking, chop all your salad ingredients.

Dressing: While potatoes are cooking, whisk all your dressing ingredients.

Spicy Sesame Coleslaw

Feathery green and red cabbages along with carrots, apples, and
scallions tossed with a spicy, creamy sesame dressing.

INGREDIENTS

Spicy Sesame Dressing:

* 1/3 cup toasted sesame seeds, plus more for serving
* 3 tablespoons tahini
* 1 1/2 tablespoons freshly squeezed lime juice or lemon juice
* 2 tablespoons coco aminos or soy sauce
* 2 tablespoons mirin
* 1 tablespoon sugar
* 1 tablespoon sriracha, or to taste
* 1-2 tablespoons warm water

Coleslaw:

* 1/2 large apple, grated or thinly sliced
* juice of one lemon or lime
* 3 cups finely shredded green cabbage
* 1 cup finely shredded red cabbage
* 2 carrots, grated
* 4 scallions (~1 cup), very thinly sliced with greens
* 1 small bunch of cilantro, chopped

INSTRUCTIONS

Make the Spicy Sesame Dressing:

Grind the sesame seeds in a mortar and pestle or by pulsing in a food processor or blender
until it is a fine meal. Add the tahini, lime juice, coco aminos or soy sauce, mirin, sugar,
and sriracha. Stir until well

Directions

Shake all dressing ingredients in a jar, or blend
together in a small food processor (affiliate link)
until smooth. If it’s on the thicker side, add a bit
of water until it pours smoothly off the end of a
spoon.

Toss all salad ingredients with dressing! You can
do this as a large batch (serves 4-6) or prep the elements and store them separately to make
the salads one at a time for individual lunches
and dinners throughout the week, which is
what I usually do! Crunchy, sweet, delicate,
and fresh!

COCONUT CORN SALAD

The best corn salad. Butter a skillet add corn, fresh thyme, red onions, toasted
almonds and coconut, and finish with a squeeze of lemon or lime juice.

INGREDIENTS

* 3 tablespoons unsalted butter
* 5 ears of corn, shucked
* fine grain sea salt
* 3 tablespoons fresh thyme leaves
* 1 cup / 1 1/2 oz / 40 g big coconut flakes, well toasted
* 1 cup / 3 oz / 85 g sliced almonds, well toasted
* 3 tablespoons chopped red onions
* big squeeze of fresh lemon or lime juice

INSTRUCTIONS

1. Melt the butter in a large skillet over medium heat.
Add the corn, sprinkle with a couple pinches of salt and
stir well, you want all the corn to be coated.
Cook for just a minute, until the corn looses its raw edge,
stir in half the thyme, and then transfer the corn to a
large serving bowl.

2. Just before you're ready to serve, add most of the coconut flakes, most of the almonds, the rest of the thyme, red onions, and citrus juice. Stir well. Taste, season with more salt, to taste, and serve

Roasted Beet Goat Cheese Salad

This beet salad recipe is just as pretty as it is delicious! I love to serve it when I'm entertaining.
If you want to get ahead, you can roast the beets and make the dressing up to
2 days in advance and store them in the fridge. Assemble the salad just before serving.

Crispy Smashed Potatoes

* Preheat the oven to 400°F.
* Place each beet on a piece of foil. Drizzle generously with olive oil and sprinkle with salt and pepper.
Wrap the beets in the foil, place on a baking sheet, and roast for 35 to 60 minutes, or until fork-tender. The timing will depend on the size and freshness of the beets.

* Let the beets cool and chill them in the fridge until ready to use.

* Slice the beets into ¼-inch-thick rounds. Assemble the salad with the greens, shallots, apples, beets, walnuts, cheese, and microgreens, if using.
Drizzle with balsamic vinaigrette. Season with flaky sea salt and pepper and serve.

PASTA SALAD WITH A TWIST

This easy pasta salad recipe is incredibly flexible, depending on the season and the
ingredients you have in your kitchen. Use a hearty pasta shape with
plenty of nooks and crannies—like rotini or penne—to hold onto the dressing.
The pepperoncini peppers are optional, but delicious if you have them on hand.
We also love adding fresh mozzarella balls and parmesan
cheese (the parm almost melts into the vinaigrette).

INGREDIENTS

1 pound dried pasta like fusilli, penne, rotini or farfalle
1 cup sliced bell pepper (1 medium)
1 cup thinly sliced zucchini (½ medium)
1 cup cherry tomatoes, cut in half
⅓ cup thinly sliced green onions (5 to 6 green onions)
¼ cup sliced pepperoncini or banana peppers (optional)
1 cup (4 ounces) olives, halved (try a mix of Kalamata
and green olives)
1 cup (2 ounces) grated Parmesan or other hard cheese
1 cup (6 ounces) fresh mozzarella balls, chopped
⅓ cup fresh parsley or basil, chopped

FOR THE HOMEMADE DRESSING

⅓ cup (80 ml) red wine

4 garlic cloves, peeled, smashed
1/2 cup extra-virgin olive oil
1/3 cup balsamic vinegar
1/2 tsp. granulated sugar
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper

SALAD

1 medium red onion, cut into 1/2" slices
1 tsp. extra-virgin olive oil
Kosher salt
1 1/4 lb. boneless ribeye steak
Freshly ground black pepper
5 oz. baby arugula and/or baby spinach
1 avocado, pitted, sliced
1 cup cherry tomatoes, halved
4 oz. blue cheese, crumbled

Torn fresh basil leaves, for serving

Instructions

Step 1

In a small saucepan over medium heat, cook garlic and oil, stirring occasionally, until garlic is fragrant
and softened, 5 to 7 minutes.
Let cool slightly.

Step 2

Transfer garlic and oil to a blender. Add vinegar, granulated sugar, salt, and pepper and blend until very smooth. Pour into a jar and refrigerate until ready to use.

Step 3

Make Ahead: Dressing can be made 1 week ahead. Keep refrigerated.

on their menu. And because one can’t just go to Oliver’s every single day, but one has giant
salad needs that simply must be met, one must recreate it at home for maximum.

The Smoked Ranch

1/2 cup mayo
* 1/2 cup full-fat Greek yogurt or sour cream
* 1/2 cup milk or buttermilk
* 1 teaspoon white vinegar or lemon juice (more to taste)
* 2 teaspoons freeze-dried dill
* 2 teaspoons freeze-dried chives (or 2 tablespoon

FOR THE HOMEMADE DRESSING

Bacon: Bake at 400 degrees for 20 minutes.
Drain and cool on a paper-towel lined plate. Crumble for the salad.

Salmon: Pat dry and season with salt and pepper. Bake at 400 degrees for 8-10 minutes (depending on the size
of your piece of salmon and desired doneness).10.

Salad: Assemble everything over greens and drizzle
