ZUCCHINI SOUP

A simple and delicious zucchini soup made with potatoes, sautéed onions, and bolstered with spinach.
Add a bit of chopped chile for heat if you like. It's light and healthy, and at the same time a creamy texture
and plenty of taste!If you'd like a richer version of this soup feel free to finish the soup with a splash of cream,
or a dollop of creme fraiche in place of the finishing drizzle of olive oil-or add both. Topping ideas include:
roasted cherry tomatoes, toasted pita chips, grated cheese, chopped cilantro.

INGREDIENTS

* 3 tablespoons extra-virgin olive oil, plus more for drizzling
* 3 cloves garlic, chopped
* 2 medium onions, roughly chopped
* 1 serrano chile pepper, stemmed (optional)
* 3/4 teaspoon fine grain sea salt
* 2 medium russet potatoes, peeled and cut into 1/2-inch cubes
* 2 medium zucchini, cut into 1/2-inch cubes
* 4 cups vegetable broth
* 4 cups fresh spinach leaves (or kale), loosely packed
* 1 cup cilantro, loosely chopped







LASAGNA SOUP

This LASAGNA SOUP is one of my all time favorites!You get all the flavours of a delicious hearty lasagna in a
comforting soup form. It's loaded with beet, tomatoes and Italian herbs and the melty cheese just takes it over the top.
On a chilly day this is one of my favorite ways to warm up. It's such a cozy soup and it has such an incredibly flavor.
You get an herbed tomato based broth that's filled with hearty bits of ground beef, and it's finished off with a generous
mound of cheese that melts perfectly into the steaming hot soup.This simple recipe may look a little daunting due to the
long list of ingredients but a lot of it is pantry staples you likely already have so don't miss out on this recipe thinking it's
too much.It's actually easy to make and perfect for weeknights.

INGREDIENTS

* 2 Tbsp olive oil, divided
* 1 Ib lean ground beef
* 1 large yellow onion diced (1 3/4 cups)
* 5 garlic cloves to taste, minced*
* 4 1/2 cups low sodium chicken broth

INSTRUCTIONS

* Heat one tablespoon olive oil in a large pot over medium-high heat.Once hot, crumble beef into pot, season with salt and pepper to taste and cook, stirring occasionally until browned. Drain fat from beef and set beef aside. B
* Heat remaining 1 Tbsp olive oil in pot, add chopped yellow onion and saute until it begins to soften, about 3 minutes. Add in garlic and saute 30 seconds longer.
* Add in chicken broth, diced tomatoes, crushed tomatoes, tomato paste, basil, oregano, rosemary, thyme, browned ground beef and season with salt and pepper to taste.
* Bring just to a boil, then reduce heat to medium-low, cover and simmer 20 minutes.
* Meanwhile, prepare lasagna noodles according to directions listed on package.
* In a mixing bowl, using a fork, stir together mozzarella, parmesan and ricotta.
* Stir cooked pasta into soup along with parsley, then thin soup with a little more broth if desired** •
* Ladle soup into bowls, dollop with a large scoop of the cheese mixture and sprinkle with chopped parsley (cheese will melt well once stirred into soup).

WHITE BEAN AND SPINACH SOUP

Here you go! Spinach and White Bean Soup is a cozy, no-fuss comfort food that cooks
tast & especially yummy with some nicesourdough to dunk

INGREDIENTS

* 1/4 cup extra-virgin olive oil, divided
* 1 medium onion, finely sliced (about 1 cup)
* 1 stalk celery, diced (about 1/2 cup)
* 6 medium cloves garlic, thinly sliced
* 1 tablespoon chopped fresh rosemary leaves
* 1 quart veggie stock
* 1 bay leaf
* 1(15-ounce) can white beans, drained and rinsed
* 1 bunch spinach (about 4 ounces), trimmed and washed
* 2 teaspoons juice from 1 whole lemon
* Kosher salt and freshly ground black pepper

Directions

1. Heat 2 tablespoons oil in a medium saucepan over medium-high heat until shimmering. Add onions, celery, garlic, and rosemary. Cook, stirring frequently, until onions and garlic are softened but not browned, about 4 minutes. Add broth, bay leaves and beans.

Bring to a boil, reduce to a bare simmer and cook for 10 minutes. Add spinach and continue cooking until completely wilted, about 5 minutes longer. Season to taste with salt and pepper. Stir in lemon juice. Serve immediately, drizzling remaining olive oil over bowls.

CELERIAC ROOT SOUP

INGREDIENTS

1 large or 2 medium size peeled and roughly chopped celeriac
1 medium white onion, peeled and chopped4 large garlic cloves, peeled and chopped
4 tbsp olive
6 cups vegetable or chicken stock

A large handful of parsley, roughly chopped a drizzle of truffle oil or extra-virgin olive oil, to serve Crushed hazelnuts for garnish.

INSTRUCTIONS

Cook the celeriac, onions and garlic in a large pot with the olive oil.
Toss to coat and stir in olive oil for 5 minutes, then add fennel and salt and pepper.
Meanwhile, if you're using hazelnuts for garnish, place in frying pan lightly oiled, for 5-6 minutes, until golden. Set aside to cool.
Add the stock to the celeriac, garlic onion and fennel.Bring to a boil and simmer for 30-40 minutes.

Allow the soup to cool. Emulsify the soup and season to taste.Chop the hazelnuts quite coarsely. Serve the soup with a sprinkling of nuts and parsley, plus a drizzle of oil.

ROASTED BUTTERNUT SQUASH SOUP

Butternut squash soup is so flavorful and easy to make! Just roast the butternut
squash and onion, then toss it in a blender with the remaining ingredients and blend it up.

INGREDIENTS

3 ½ pounds butternut squash
1 tablespoon avocado oil
1 small yellow onion, halved
1 small garlic clove, peeled
½ tablespoon maple syrup
1 teaspoon saltfreshly ground black pepper, to taste
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
3 to 4 cups vegetable broth

Optional garnish: pepitas, parsley, and freshly ground black pepper

INSTRUCTIONS

Slice it in half and remove the seeds.
Preheat your oven to 425°F (220C).
Slice the ends off the butternut squash.
Stand the butternut squash on end and carefully slice it in half lengthwise.
Then, Use a spoon to remove the seeds and membrane.
Pro tip: the butternut squash is easier to slice through if you microwave it for 2 to 3 minutes.
